Strawberry Cream Sandwiches

Ingredients
12 Strawberries
8 oz. Cream Cheese, softened to room temperature
1 Pint Heavy Whipping Cream
1/4 Cup Powdered Sugar, or more to taste
1/4 Teaspoon Vanilla Extract
1 Tablespoon Lemon Zest
8-10 Slices Bread
Directions
  1. Wash and dry strawberries. Pat them with paper towels if needed to remove any excess water. 
  2. Whip the cream cheese on high until light and fluffy. Around 2-3 minutes. 
  3. Add the heavy cream, vanilla, and sugar, and continue whipping on high until the whipped cream is set stiff. Make sure to scrape down the sides. 
  4. Add lemon zest and stir to combine. 
  5. Spread a layer of cream mixture on each piece of bread. 
  6. Arrange the strawberries on half of the bread slices, making sure to align the center berries in a way that is visually appealing when cut. Add more strawberries to fill in the sides. (Note: The cream will fill in any gaps between the berries.) 
  7. Add more cream mixture on top. 
  8. Add a slice of bread on top and press it together gently. 
  9. Wrap each sandwhich tightly in plastic wrap then place them on a tray and add something slightly heavy (like a carton of eggs) on top to spread all of the cream into the nooks and crannies. 
  10. Refrigerate for 2 hours to set. 
  11. Once chilled and set, remove the plastic wrap. 
  12. Cut off the edges with a sharp serrated knife, turning your cutting board (not the sandwich) as you go. Be sure to clean the knife between each cut and remove the cut crusts out of the way. 
  13. Finally, cut the sandwich diagonally.
